Spicy chicken and chorizo Cajun rigatoni, made easy using Jay's Spicy Cajun Seasoning along with some fresh cherry tomatoes, red pepper with a burst of freshness lemony freshness. Pair with our Cheesy Cajun Garlic Bread for the ultimate Cajun feast!
Ingredients

2 TBSP JAY’s Spicy Cajun Seasoning

400g Chorizo Diced

4 Chicken Breasts

1 Red Pepper
-
Handful Cherry Tomatoes
-
1 Lemon
-
1 Red Onion
-
4 Garlic Cloves
-
2 Red Chilli
-
4 TBSP Greek Yoghurt
-
300ml Creme Fraiche
-
500g Rigatoni
-
Fresh Parsley
-
Parmesan
Directions
Marinate the diced chicken in the Greek yoghurt, lemon juice and 1 TBSP Jay’s Spicy Cajun Seasoning. Leave for at least 2 hours.
Add your diced Chorizo to a cold pan then begin to cook, after some chorizo fat has been rendered add your marinated chicken. Cook for 5-10minutes then remove from the pan.
To the same pan add your sliced onion, cherry tomatoes, chopped chilli and garlic. Once softened add back in your chicken and chorizo.
Add your pasta to heavily salted boiling water.
Add your creme fraiche to the pan containing your chicken and chorizo mix. Add 2 TBSP Jay’s Spicy Cajun Seasoning along with some pasta water to create your sauce.
Add in your pasta, mix and top with plenty fresh parsley and parmesan! Enjoy!
