Ingredients

3 Chicken Breasts

3 TBSP Jay’s El Mexicana Seasoning

1 Sliced Red Pepper

1 Sliced Red Onion

3 Garlic Cloves
-
1 Tin Chopped Tomatoes

300ml Chicken Stock
-
Mozzarella Cheese
-
2 Avocados
-
250ml Soured Cream
-
Handful Coriander
-
Juice 2 Limes
-
Jay’s Original Hot Sauce

2 x Chopped Limes

Small Tortillas
Directions
Add oil to hot pan, add your chicken, red pepper, red onion and garlic cloves followed by 2 TBSP Jay’s El Mexicana, cook for 5 minutes
Add your tinned chopped tomatoes and chicken stock, bring to a boil and add 1 TBSP Jay’s El Mexicana. Drop to a simmer and cook until chicken is fork tender.
Remove chicken and shred adding some of the sauce
Make your avocado crema: blitz your avocado, soured cream, 1 x garlic clove, lime juice and coriander
To make your tacos: get a pan hot and add some oil, dunk your tortilla in the sauce you cooked your chicken in, add to pan then top with your chicken mix and some cheese, fold and toast until crispy!
Open your taco up and fill it with avocado crema and hot sauce!
